It is a honey with a strong character with a strong and persistent taste: for warm palates. Its full-bodied flavor is highly appreciated by honey connoisseurs and finds positive opinions even among detractors. The color makes it immediately recognizable to an expert eye. It is a honey that is difficult to crystallize.

Flavor The flavor of chestnut honey is predominantly bitter. The palate is first enveloped by a sensation of sweetness which then leaves room for the aromatic flavor that pervades and persists. It is an intense flavor for palates accustomed to the strong taste of chestnut but which also finds approval among lovers of strong flavours.

Origin The nectariferous source of chestnut honey is Castanea sativa Mill., the tree from which we can also collect chestnuts. It is very widespread in continental climates, including in Friuli. It is a plant often affected by pathologies that affect the production of nectar as well as the production of fruit, which is why it is not always possible to obtain honey with a high pollen content.

Harvesting season The honey harvest starts in June, it is one of the last useful blooms full of nectar for bees. The harvest is influenced by summer rainfall: in the case of a very dry climate the honey will be very rich and made almost pure.

Type of processing Since chestnut honey is one of the last harvests and is not subject to rapid crystallisation, it is stored in the honeycombs until honey extraction which takes place very late in the season.

Beneficial properties Chestnut honey has many widely recognized properties including a strong antimicrobial quality and can help in the treatment of ulcers and infections. The antioxidant properties and iron content are also higher than other honeys.
