The extra virgin olive oil Tradizione di Viola comes from the careful selection and processing of the olives in the family oil mill. A product according to"tradition"that best expresses the characteristics of the native varieties of which it is composed.
The tradition of Viola oil, green with golden yellow reflections, is broad on the nose and rich in vegetal notes of artichoke and wild herbs. The taste is fine and able to give sensations of thistle and mint with spicy hints of black pepper.
It has many uses in the kitchen, base for cooking and creaming pasta and rice in a pan, marinated tuna, molluscs au gratin and vegetable soups. Ideal for grilled radicchio, pinzimonio, artichoke salads with parmesan flakes, meat sauce and fried fish.
