Vinification : Spontaneous fermentation in small concrete tanks for approximately 15/18 days with several daily pumping overs and délestages.
Aging : 24 months in first, second and third passage French oak barriques.

GRAPES : 60% Cabernet Sauvignon, 30% Carmenère, 10% Merlot.

San Lonardo - The cellar
In the ancient fermentation cellar there are tanks built exclusively in concrete. Here our red wines ferment spontaneously, without the aid of any technology or selected yeasts. Fermentations last on average no more than 15/18 days during which multiple pumpovers and délestages are carried out. Once fermentation is complete, the vats are drawn off and the pomace is gently pressed under the attentive gaze of our cellarmen, who have handed down their craft for generations.
