Very versatile rosé. Made with only Sagrantino grapes. Harvest by hand, soft pressing of the grapes, within six hours of harvesting. Slow first fermentation, at a controlled temperature to preserve the primary aromas. Second fermentation and maturation on the yeasts strictly according to the Classic method with natural fermentation in the bottle, for at least 18 months.

  • On the nose : The scent is fresh, fine, floral, with notes of red apple, citrus fruit, grapefruit and bread peel.
  • Pairings:: ideal as an aperitif or with starters, it goes well with fish first and second courses, but also with white meats and fresh cheeses.

Scacciadiavoli winery

The Scacciadiavoli winery boasts a history spanning more than a hundred years, which tells of generations of winemakers and how it is still possible to pass on the love for the land and the territory. Montefalco and the Sagrantino grape are now part of the DNA of the Scacciadiavoli winery and the Pambuffetti family, a union that began with Amilcare's dream and which now continues with the fourth generation of the family. The Scacciadiavoli winery takes its name from an exorcist who lived on the edge of the current property and who used local wine for his rituals. Conceived and founded by Prince Ugo Boncompagni Ludovisi as a wine "establishment" in 1884, the Scacciadiavoli winery was, even then, an impressive and very modern wine complex. In 1954 Amilcare Pambuffetti, at the age of 71, acquired the Scacciadiavoli estate, the same estate where as a boy, around the age of 14, he had worked as a boy. Upon his death in 1977, his sons Alfio, Settimio and Mario continued their father's business. In 2000 the Pambuffetti brothers (Francesco, Carlo, and Amilcare), sons of Settimio, as per ancient tradition, took over the oldest cellar in the area. From 1884 to today, the Scacciadiavoli winery has never stopped producing wine, even though in 2000 major renovations were carried out, aimed at preserving and conserving all the original ancient structural and architectural elements and introducing modern equipment and technologies. The entire structure of the cellar rests delicately on the Umbrian hill and, thanks to the vertical structure on four levels, one of which is underground, all wine production takes place by gravity. A few years ago the fourth generation of the Pambuffetti family also entered the business, Amilcare, Iacopo, Liù, Romeo and Fiammetta. To date, the winery boasts 130 hectares of surface area, of which 40 are planted with vineyards, with a production of approximately 250,000 bottles. The vineyards are located at an average altitude of 400 meters above sea level, on clayey and medium-deep soils, very suitable for quality viticulture focused on late varieties such as Sagrantino. The vineyards occupy various slopes of the hill reaching the municipalities of Montefalco, Gualdo Cattaneo and Giano dell'Umbria.
