Characteristics : Color: It has a fascinating intense ruby ​​red with delicate garnet reflections, typical of the Sagrantino grape. Bouquet: The aromatic profile is enriched by spicy notes, with hints of cinnamon that blend harmoniously with the aromas of red fruit, such as cherry and black cherry. With bottle age, dried plum tones also develop, contributing to extraordinary complexity. Taste: The palate is enveloped by a full and persistent body, characterized by well-integrated tannins and a pleasant bitter aftertaste.

Vinification : The production of this Montefalco Sagrantino DOCG is characterized by meticulous vinification, with a long maceration of the skins which lasts for at least three weeks. During the fermentation process, a temperature below 30°C is maintained, thus optimizing the extraction of the precious aromas. The maceration phase with the skins takes place at a controlled temperature between 25°C and 28°C, to favor optimal concentration. The wine then rests in small barrels, Barriques or Tonneaux, of French oak after the completion of malolactic fermentation.

Maturation and Aging : To obtain the distinctive complexity and elegance of this wine, a total maturation of 36 months is required, as prescribed by the production specifications. These are divided equally into three phases: 12 months in small wood, followed by a further 12 months in steel, and finally, a further 12 months in bottle to allow the wine to reach its full maturity.

Pairings : This Montefalco Sagrantino goes beautifully with second courses of red meat, game dishes and mature cheeses, offering an unforgettable culinary experience. Evolution Potential: Thanks to its structure and complexity, this wine has considerable bottle aging potential. If stored properly, it can develop further nuance and complexity for over 10 years.

Perticaia winery

A territory, a vine, a wine. It is natural that right here, in the center of green Umbria, among hills cultivated with vineyards and olive trees, dotted with towers, villages and medieval castles, it was decided to create Perticaia. After the purchase of the land, substantial work begins on the planting of new vineyards and the construction of a modern cellar, in perfect balance with the surrounding environment and taking care to maintain the appearance of the old farms in the area. Respectful of the teachings of the past, the company today boasts around fifty hectares of vineyards. Of these, more than ten hectares are planted in Sagrantino, as well as one and a half hectares of olive groves: "Vigna delle Querce" is bordered by centuries-old plants preserved after the transformation of the land, once used as arable land; “Vigna Attone” runs alongside the stream of the same name and “Vigna Montioni” takes its name from the family of the old owners. The land, all hilly, is located on a slight slope, at an altitude between 320 and 350 m above sea level, mainly exposed to the south, south-west. As per tradition for the Perticaia winery, after the harvest, which takes place manually in the cellar, each production step is aimed at enhancing what the season and the territory have been able to express in the fruit. Today Perticaia is a model organic company for the territory. A cellar capable of producing wines of great expressiveness and elegance, to be discovered one by one to come into contact with Umbria, and with those which are the most representative vines of the entire region. and the Montefalco area in particular.
